Just had to try this once after getting back from Athens, and must say, pretty much nailed it in one go. Actually it’s so easy that one should almost be ashamed if this salad fails 😉
- 200 gr. raw spinach
- 35-50 gr. feta cheese (or similar), crumbled
- 2-3 tablespoons toasted sesame seeds
- 3 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 1 teaspoon honey (optional)
Mix balsamic vinegar, olive oil and honey. Add spinach, mix well with sauce. I choose not to use a lot of dressing as the cheese flavour needs to be as strong. Then, add sesame seeds and feta. Thats all!
